Even though zucchini and summer squash may look like cucumbers, storage for these summertime veggies are quite different! Do not wash or rinse zucchini before storing. Wrap a wax or plastic bag tightly around the zucchini, squeezing out as much of the air from the bag as possible. Store fresh zucchini in the refrigerator. The colder temperature will decrease the respiration rate, helping to preserve its nutrients and keeping zucchini fresh longer.
